View Full Version : A lil italian sauce recipe

Ok heres what you need,
Olive Oil
Can of diced tomatoes
Small can of tomato paste (unless you like thin sauce)
Half or one whole Onion
Fresh Garlic or garlic powder
Green Pepper
Zuchinni (if you so desire for pepper and zuchinni)
basil
oregano
rep pepper flakes
a sip of red wine
spoonful of sugar (not much needed)
oh yeah the best part some green bud, 1/4 oz for small gathering, 1/2 oz if you have more guests

Here's what you do... First you need to heat up some olive oil, enough to cover your bud. You should do this on medium to low heat, it is very important to not burn the bud during the process (unless its in a blunt wrap or paper). Fry the bud for twenty minutes to half an hour in the olive oil. Once you have done this you need to take out all the bud. You can run it through cheesecloth or just scoop it out the old fashion way. Discard the bud, if you have done it right there is no more good stuff left in it. Keep the oil frying because next you want to throw in your zuchini and peppers, let them fry for about 5-10 minutes. Then you'll want to add your onion, chopped up of course and garlic, at this time you should add a pinch of basil, a little bigger pinch of oregano, and red pepper flakes to suit your taste. Let this all fry for another 5-10 minutes. Once your vegetables are ready turn down the heat and add your diced tomatoes and tomatoe paste (about 3/4 to 1/2 of small can tomato paste is usually good). Add a small spoonful of sugar to the sauce and a sips worth of red wine. It is good idea to let this simmer for at least twenty minutes to let the taste of the ingreidients cook into the sauce. Stir often and dont let burn of course. Next put on top your favorite pasta (mine's spaghetti).

A couple notes to this. Your oil is going to look discolored after frying the bud in it, dont worry. If you want you can forgo the diced tomatoes and tomato paste by using something like ragu. And here's a tip for cooking your pasta, add a little olive oil to the water you are going to boil it in, and always use a WOODEN spoon to stir your pasta.

Be safe, its going to make your home reek like bud while frying. Have fun, and remember it takes a while for it to kick in, so don't go on a long drive before it does.

Great recipe...any chance you can get some pics of this wonderful taste treat...High res is best...would love to add it to the next issue of the mag...please pm and let me know...Hugs Uni ;)
