This recipe was made in honor of Dr. Jay whom the medical marijuana community lost on April 24, 2005. I found this recipe on the The American Alliance for Medical Cannabis website (which is no longer available). I have adapted the recipe to my own canna butter recipe and didn’t add any liqueur. I did, however, add a couple of tablespoons of milk to thin the batter as it was very dry and not looking at all like a cake batter. I also used dark chocolate chips. This recipe was very simple to make; from start to finish it only took one hour. The finished product seems a little uncooked in the centre but I’ve learned my lesson.

Marble Madness

Ingredients:
3/4 cups of canna butter
1 1/2 cups of light brown sugar
2 jumbo eggs, beaten
2 tsp vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup chocolate chips
1 tbsp Triple Sec or Amaretto liqueur (optional)

Directions
Melt the canna butter in a sauce pan over low heat and pour it into a bowl containing the sugar then stir to mix.

Beat in the eggs and vanilla and the liqueur of your
choice.

Use a double boiler to melt your chocolate chips. Stir
often. This step is what gives you the “marble” effect. If
you’re lazy you can just add the chips to the final batter.

In another bowl sift the dry ingredients together, mix with
the wet ingredients, and then drizzle in the chocolate,
forming swirls, or just mix in chips (some of you may prefer butterscotch chips or even white chocolate).

Place the batter in a baking pan that has been lightly oiled
and floured. Bake at 325 degrees F (I know that’s low) for
about 20-40 minutes. You can tell when the cake is done
by sticking a toothpick in it. When the toothpick comes
out relatively clean, the cake is ready.

Remove from the oven and let the cake cool for a bit
before attempting to remove it from the pan. The cake is
going to be crumbly so it’s tough to cut out nice squares,
but we don’t mind.

Dr. Jay's Words about Marble Madness:

Some of the best things in life are easy. This recipe that is ready in minutes and tastes delightful. The only problem with this dessert treat is the urge to eat more than is good for you. The trick to this recipe is getting the consistency right. Whenever you use canna butter in place of dairy butter the result is a more crumbly product. For firmer cookies and cakes it’s best to do a 50/50 mixture of butters, but Nancy Wife and I prefer straight canna butter for potency. As usual, feel free to improvise and use whatever ratio is right for you. Now, some believe that when your cake crumbles the calories leak out and it’s less fattening. Of course, this is true. You eat this cake by using a fork to push down on the moist blond/green/chocolate crumbs, sticking them to the back of the fork, or you can use your fingers and lots of licking.
A word of caution about this cake: Don’t leave it out for the kids! They’ll eat it and you’ll be in trouble!

Marble Madness Review – submitted by John aka Pain Pal

Chef Uni does it again…. I am a licensed MMJ user and grower and one of Chef Uni’s taste testers.

Warning to anyone who says that these treats are not quite strong enough or are too small of a sample... This tasty treat was a real stop everything, sit down and hold on. Very potent in all areas, with a body/head coordination and thought provoking, knock me down and pick me up spinning effect. They totally affected my whole body and mind to the point of me not being able to do much of anything. As for pain relief, it works great. I don’t know how much pain relief there would have been if I had been doing anything strenuous, but I couldn’t do anything anyway, it was a super good experience, one that I had not experienced in quite a few years.

So all I can say is WOW…what a treat in more ways than one!! Chef Uni your treats are awesome….
