View Full Version : 2 Bite Canna Cranberry Lemon Muffins

Ingredients:

2 cups all purpose flour
1/2 cup sugar
3 tsp baking powder
1/2 teaspoon salt
3/4 cup milk
1/2 cup melted canna butter
1 egg, beaten
1 tbsp grated lemon rind
1 cup chopped cranberries (fresh or frozen)

Heat oven to 400 F. Line 16 place small cup muffin tin with paper cups.

In medium bowl, combine flour, sugar, baking powder and salt and lemon rind; mix well.

In small bowl combine milk, egg and canna butter. Add dry ingredients to the moist and mix until dry ingredients are moistened. Add cranberries till mixed through, don't over mix.

Fill prepared muffin cups 2/3 full. Bake for 18 - 22 minutes or until golden brown. Cool 1 minute before removing from pan.

yummy.. depends on strength of the butter I'd say..lol.. had cookies.. could eat 3 or 4.. had other peeps.. could only have 1 and 1/2 and that was too much

eat 1 .. wait like 30-45 mins.. repeat if necessary

what I do...

Good advice...it also depends on the size of the person and their tolerance level. Everyone is different...so like Hammer said...eat one, wait a bit and then have another.

I made the butter last night by using the double boiler and cheesecloth to drain out the material..... its tastes very potent...i used a 1/2oz of some decent bud to 1.5lb of butter....
So im assuming that should be potent???

Excellent recipe.

One small thing though, if you freeze any type of berries before mixing, and then roll them around in some flour just before adding to the dough, the berries will not run. Not such a big deal with cranberries but makes a huge difference in such things as rasberries and blue berries.

Again, this is one that I will have to put in my cookbook.

so any idea on using bud for the cannabutter??? hey unicorn... im working on a great new recipe.. im a cook by trade, and ive honestly never ever worked with mj in food.. Last night while cooking the cannabutter with a fellow chef from work, we realized the amazing taste the butter had... it would be amazing on lobster, but the recipe im going to forward to you is for a bernaise sauce that we are going to use to top sirlons with cooked shrimp, scallops and asparagus.... any thoughts?????
I can only assume something like that would be extremely potent because of the amount of butter used in the recipe compared to normal muffins and brownies recipes...

I'm a hit and miss cook...I'm not a professional by any means, I just try things out, they either work or they don't...some are just tasty, more than medicating (so the guinea pigs say).

If you submit the recipe don't forget the high res pics to go with it...I can't make all the recipes I get so its easier if the members can do them up and take pics and send them to me.

can anyone recommend where to go for recipes,unemployed and uninsured cant even afford to subscribe to magazine. Just looking for a site to go for recipes that you can trust.

I think you have found it. What else are you looking for? Many of our recipes have been repeat tested and have posted feed back. just look around and choose one you like. :)

once you have the cana butter recipe what more do you need any recipe can be converted:) :)
